Chicken Broccoli Risotto

Total Time: 45 minutes

Serves: 4-6 people


Ingredients:


  • 1 stick butter

  • 2 chicken breasts, cut into pieces

  • 2 cups risotto rice

  • 1/2 cup white cooking wine

  • 6-8 cups chicken broth

  • 2 cups broccoli florets

  • 1 onion, chopped

  • 3 cloves minced garlic

  • 1 cup grated Parmesan cheese

  • Fresh basil for garnish

  • Lightly Salt

  • Black Pepper to taste


Instructions:


  1. Melt butter in a large pot over high heat

  2. Add your lightly salted chicken and cook until it starts to brown

  3. Add the risotto rice and stir until lightly toasted

  4. Pour in white cooking wine and stir

  5. In another pot, heat chicken broth until it's almost boiling

  6. Add hot broth to the rice one ladle at a time, stirring often

  7. Keep adding broth every 5 minutes for about 30 minutes

  8. When rice is almost done, add broccoli and Parmesan cheese

  9. Let sit for 5 minutes

  10. Give one final stir and serve hot
